Support has been slow for our eco village in terms of donations, but this does not deter us. The goal of making every action as conscious, and mindful as possible means watching what we do with waste, what we use to build with, where we throw our food offcuts, and how we use food in the most sustainable way so as not to waste any food.
I wanted to share in this report how our garden is growing the most beautiful and abundant beetroot. Since we cant always eat them as fast as we can harvest them in order to prevent wastage, and rotting - we have now started making our own beautiful pickled beetroot. The little bit of funding we have gotten we have invested in some large jars, kitchen equipment and tools so that we can keep doing this process more and more with veggies from the garden. Creating healthy nutritious food for the children, and acting as mindfull as possible in the process.
